Smoked chicken liver and foie gras parfait

“I’ve wanted to run a casual place for years,” said John Blakely, owner of the trendy new French bistro located in downtown Vancouver, Le Parisien. The sidewalk café restaurant opened in early April 2012 with much fanfare and excitement. Until now, Vancouver hasn’t had a lot of options for old-world comfort food.

Executive Chef Tobias Grignon has mined the bistro repertoire to bring the best of the best to Le Parisien. The menu boasts a wide selection of classic French cuisine – from smoked chicken liver and foie gras parfait to braised lamb gnocchi.

Le Parisien’s prices also reflect the French bistro ethos of good food at reasonable prices –is easy on your wallet.

The bistro is open Tuesday – Sunday from 8am – 11pm, with Saturday and Sunday brunch served from 10am – 3pm.

Chefs Across the Water is back for another year at Hastings Country House on Salt Spring Island. The third-annual guest chef program invites distinguished chefs from luxury hotels and gourmet restaurants to participate in a dinner series in June, September and October.

The 2012 Chefs Across the Water participants are:

Each chef will prepare a five-course dinner incorporating Salt Spring Island’s produce; seafood that includes, locally caught Dungeness crab and sable fish, as well as lamb and livestock for a foodie’s dream come true.  Wine pairings will be offered to complement the extraordinary menu.

Nothing says spring like an afternoon in the garden and afternoon tea with a group of friends. Sure, there are lots of places in Vancouver to get a good, quick cup of tea, there aren’t a lot of places that serve traditional afternoon tea. New this year at VanDusen Gardens is Afternoon Tea.

“It seemed a natural thing to do here,” said Truffles owner Nin Rai. “I can’t imagine a more beautiful setting in which to unwind over a cup of tea. The stress just melts away here.”

Truffles Afternoon Tea includes a three-tiered tray of both sweet and savoury goodies, plus an extensive collection of organic and private label teas. It’s a great value too – just $28 for two people, or $50 for four.

The first tier has a selection of daily sandwiches and fresh-baked sweet or savoury scones. The middle tier has coconut macaroons, shortbread cookies and a croissant for two, and the top tier features jewel-toned French macaroons and petit-fours. The service includes house-made strawberry jam and VanDusen’s very own un-pasteurized organic honey.

The tea selection is pretty special too. The signature tea to try is VanDusen’s very own private label black tea, blended by The Secret Garden Tea Company in honour of the visit of HRH The Duchess of Cornwall in 2010. Other teas include Earl Grey with rose, chocolate mint Roiboos, Masala Chai and Darjeeling.

Afternoon Tea is served every day at Truffles in VanDusen Gardens from 11am – closing. They are located in the new Visitors Centre at VanDusen Botanical Garden (5151 Oak Street, Vancouver).

Every Sunday, as if by clockwork, Vancouverites head to their favourite brunch spots with their group of friends to catch up on the weeks events and the tales from Saturday nights adventures out on the town. This Sunday, April 29, mix it up a bit. Executive Chef Brad Hendrickson at Ensemble Tap Restaurant will host a brunch party fundraiser to support Vancouver’s queer community resource centre, Qmunity.

Chef Hendrickson’s brunch menu includes a choice of three signature brunch entrees, fresh-squeezed Momosa, and coffee. Entertainment will include the Burlesque Beauties Drag Queens.

Tickets are $25 per person and can be purchased online.  There are only 130 tickets available. 25% of event proceeds plus $1 per drink special sold tickets will go to Qmunity.

It’s spring. Time to enjoy a relaxing brunch with friends on the patio overlooking False Creek. Delicious fare, inviting atmosphere and friendly staff await at Provence Marinaside in downtown Vancouver.

Located on just a quick 40 minute ferry ride from Vancouver is Gibsons, BC, home of Sita’s restaurant. If you enjoy homemade, Italian-style fare, this is your stop when visiting the Sunshine Coast.

From fresh-baked pasta to hand-tossed pizza’s and slow-cooked ribs, most items are made right to order. The dishes incorporate locally sourced seafood all the way to vegetarian options.

The modern family restaurant has both dining and lounge options. In the summer months the patio overlooking the ocean is open too. The servers are very friendly and know their way around the menu, pointing out their favourites.

Although many of the pasta dishes and breads are made fresh on-site, check with your server that the item has been made in-house – some items on the dinner and dessert menu are not made on-site.

Five perfectly set tables. Five-star chefs preparing three-course dinners. Flowing wine. Gracious hosts. Guess who’s coming for dinner? Well, it could be you if you are quick enough to get tickets to the Growing Chef’s Guess Who’s Coming to Dinner fundraising dinner.

Similar to the 1980’s board game and movie, Clue, the Guess Who’s Coming for Dinner? is a secret dinner featuring private parties hosted in elegant homes prepared by some of Vancouver’s most exciting chefs.

Each intiamate dinner party includes a themed three-course dinner in a top-secret location. At the end of the evening, all the guests from each of the dinner parties will gather together to share their stories and compare notes to determine the three favourite themes of the night.

The Guess Who’s Coming to Dinner? is a fundraising event for Growing Chefs!, a not-for-profit organization teaching elementary school children on food and urban agriculture by placing volunteer chefs in school classrooms while leading fun lessons about vegetables, cooking, sustainability, and healthy eating.

We might not be in Paris, but the romantic feeling of an authentic French sidewalk neighbourhood bistro opens this Friday in Vancouver’s West End. Le Parisien officially opens today at 751 Denman Street serving morning coffee and pastries, lunch, dinner and brunch.

“I’ve wanted to run a casual place for years,” said John Blakeley, owner of Le Parisien and Kitsilano’s Bistro Paris. “Opening Le Parisien means a lot to me. For years it was the iconic Café de Paris – it was then owned by Maurice Richez who gave me my first serving job when I came to Vancouver. Almost everything I know about restaurants I learned from him. To open Le Parisien in the same location is my tribute to him.”

Executive Chef, Tobias Grignon, has come up with the bistro menu, preparing the best items including roast chicken for two, cote de boeuf, croquet monsieur, moules et frites, and omelettes. The menu prices also very reasonable too.

Next time you’re in Vancouver’s West End, stop by for a quick coffee, enjoy a leisurely lunch, linger over a succulent dinner, or catch-up with friends over brunch.

Satisfying a sweet tooth in Yaletown is no easy… but imaging sinking your teeth into chocolate bread pudding, served hot with a chocolate toffee crumble on top. The mix of crunch and hearty soft bread, melded together with a creamy chocolate sauce and Bailey’s crème anglaise is spectacular.

Now, stop imaging and get back to reality. This special dessert treat is served daily at Glowbal Grill in Yaletown. At just $8.95, it’s a great way to end an evening walk along the seawall, share on a romantic date, or reward yourself after a hot yoga class.

The long awaiting opening of the new Cactus Club location at English Bay in downtown Vancouver is now over. The new two-story restaurant features beautiful floor-to-ceiling windows overlooking the beach and ocean.

The menu features most of the classic Cactus Club menu items and new features from Chef Rob Fenie. Ocean Wise has even endorsed the menu, meaning that seafood served in the restaurant meets the sustainability standards set-out by the Vancouver Aquarium.

As with other locations, the staff are warm and friendly.

The restaurant also meets Leadership in Energy and Environmental Design (LEED) Gold Certification, for its design, construction and operations. The building features a living green rooftop, organic garden and water-efficient landscaping.

 Traditional southern barbeque is alive and well in Vancouver thanks to the hard work of George Siu, an original owner of Not Just Desserts, and Park Heffelfinger, Vancouver Wine Academy.  These two gentlemen travelled the southern United States, including Memphis to seek out the truth on what makes the perfect barbeque. Their quest was successful and in 2002 they started Memphis Blues Barbeque House.

In true southern style, they slow cook the meat over hardwood so it is tender and absorbs all the rich, smoky flavours. There’s everything from ribs, to pulled pork to beef brisket.

They also serve traditional cornbread, coleslaw and baked beans, along with a variety of beers and whiskey’s. Get ready to get messy – there will be barbeque sauce dripping everywhere!

This is a dining experience everyone will enjoy. They have two locations in Vancouver: Commercial Drive or Broadway Street. There are also locations in Surrey, Langley and Kelowna.

Since 1992, Flipslide Restaurant in Whistler, BC, has been serving the locals and resorts guests with hearty homemade fare made from fresh, local ingredients. The causal atmosphere, quality comfort food, and friendly staff are a winning combination after a long day on the mountain.

There are small plates and appetizers to start off your meal or for a late-evening snack. The Fraser Valley beef Carpaccio is a winner, thinly sliced and served with Dijon aioli and homemade crostini’s. Also on the menu are local Salt Spring Island muscles and Sawmill Bay Oysters.

Moving into entrées, the restaurant is best known for its big pasta dishes, which includes a free starter salad. Traditional pub fare is also on the menu, and there are daily specials, which are inspired by local seafood and meats.

Flipside is a family-friendly restaurant and offer pick-up / carry-out. They are also open late-night (seasonally), in case you get a craving.

Flipside Restaurant is located at 4314 Main Street, across from  the Delta Hotel and The Gap. They are open from 5:30pm – midnight during the regular winter season.

Bourbon Street, New Orleans

This past summer I had the opportunity to experience New Orleans for five days. It was an amazing experience – from the jazz music to the riverboats, to swamping tours and Prawlines. The most memorable part was Bourbon Street – the music, the dancing, the people and the culture. I’m sure back in the Big Easy they are gearing up for their biggest time of year, Mardi Gras!

This Saturday, February 25, 2012, the Davie Street businesses in Vancouver are getting together to throw the biggest Mardi Gras bash to help raise funds for the Friends for Life Society.

With the economy sputtering along, the Friends for Life Society, a not-for-profit society that delivers nutritional meals to people living with HIV/AIDS in Vancouver, the Davie Street businesses have brought back the popular event to help the financially struggling organization.

Little Sisters Bookstore and Priape have wristbands on-sale now which will get patrons into most of the bars in the Davie Street Village including Numbers, FountainHead Pub, Pumpjack, Oasis, Junction, and Celebrities Nightclub. The wristbands will include cover and VIP privilege, and most importantly, proceeds from the sales will go to Friends for Life.

Celebrities Nightclub will be going all-out by hosting the Mardi Gras Ball – complete with masks and beads. DJ Drew and Matilda Ho will have the dance floor moving all night long, and there will be performances throughout the night by Mantra Mmx, The House of Celebs and the very hot Celebrities Go Go dancers. There will be prizes for the best costumes and masks – so get creative.

Last year I was in Atlanta for Mardi Gras and this year I look forward to celebrating with masks, beads, friends and maybe a drink or two along the Davie Street village.

Best-known for her fresh-baked muffins and scones, Holli Wilson has brought her passion for baking to the new casual Truffles Café now open at Vancouver’s VanDusen Botanical Garden.

“I love to bake,” Holli said. “I make everything from scratch and put a lot of love in it. Love is my favourite ingredient.”

Located in the new Living Building, the casual café was established after Nin Rai, owner of Truffles Fine Foods and L’Abbatoir Restaurant, successfully won the bid through an exhaustive RFP process.

The café features floor to ceiling windows that overlook the Woodland Garden and Livingstone Lake. Seating ranges from small tables and chairs to comfy lounge chairs and a couch – providing a casual and relaxing ambiance. It is also the only location at VanDusen Garden with WiFi access.

The casual dining café will include fare made from fresh, local ingredients. Breakfast will include croissants, parfaits and burritos. For lunch there will be a hot item feature, two soups, salads, sandwiches, fruit salads and desserts. The affordable price menu has most items at $5 or less, with the most expensive item coming in at only $8.

Once spring comes around, this April, Truffles will offer Afternoon Tea, with traditional savoury sandwiches, sweet treat and black and organic teas. There will also be picnic baskets to take out into the garden this summer.

Truffles Café is open daily from 8:00am to 5:00pm in the new Visitor Centre at VanDusen Botanical Garden, located at 5151 Oak Street between W 33Avenue and W 37 Avenue in Vancouver, BC.

Quality, Service and Value. Three key words that keep The Keg a staple in the steakhouse category. Time and time again they turn out some of the best, most reliable quality cuts of beef, each time consistent and cooked right to order.

The average meal starts off with a “Keg Size” cocktail or highball – a two-ounce drink. Keg Ceasars, made with vodka and clamato juice, are a popular choice.

For appetizers, they are best known for their traditional ceasar salad. It’s best to ask for a fresh-made salad though because typically they are made up earlier in the day and stored in the cooler.

There are probably a dozen or more steak dinner combinations. They are best known for sirloin and prime rib. Either option will be a sure win. Don’t forget to add a glass of red wine with your steak. For entrée sides, you won’t want to miss out on the double-stuffed baked potato.

Finish off the meal with the Billy Miner Pie; mocha ice cream on a chocolate crust.

The ‘Keg Standard’ is a level of customer service they strive to deliver each and every time. It is what sets them apart from other steakhouses – consistent, friendly and genuine service.

Some locations, such as Yaletown in downtown Vancouver, exemplify outstanding service, whereas other locations like New Westminter (which is located in a very cool heritage train station), has been known at time to not live up to the Keg Standard for service.

From 9pm – 2am, on Friday, February 10, 2012, there will be guaranteed Snowstorm at Garfinkel’s nightclub in Whistler. Vancouver’s Celebrities Night Club and Gay Whistler will turn Whistler’s largest nightclub in to the coolest party of WinterPRIDE 2012.

The new sound and intelligent light system will keep the dance floor pumping all night long, along with entertainment including hot Go Go boys and a drag performance by Vancouver’s Syren..

Headlining the night is DJ Nick Bertossi of Vancouver. In the spring of 2007 he found himself thrown into Vancouver’s nightclub scene, and since then, his list of credits have been piling up. After Pride 2007, Bertossi was picked up by CanThrill entertainment for the Envy My Music series and started to make regular appearances at Vancouver night clubs including Celebrities, Shine, 1181, the Majestic (now called Junction), and became the resident DJ at 816:the World. Bertossi has opened for superstar DJs including Hex Hector and Boy George.

Opened in 2002, Glowbal Grill located in Vancouver’s trendy Yaletown is one of my favourite go-to restaurants. From Sunday morning brunch, Tuesday evening cocktails, right through to Saturday night steak dinner, Glowbal Grill is always set with the perfect vibe.

A meal wouldn’t be complete without a cocktail – either a classic or a signature Glowbal Grill original. If you’re dining for brunch, dinner or late night – the satays are an excellent choice. There’s everything including short rib with aioli oil, Kobe meatballs, buttermilk chicken and lamb shish kabob; of course there are a selection of fresh seafood choices too including tuna, tiger prawns and salmon too.

For dinner, choices range from spaghetti and Kobe meatballs to perfectly cooked steaks. Be sure to order the Brussels sprouts – they may just change your life! And it wouldn’t be complete without dessert like the warm Brazilian chocolate cheesecake.

The restaurant, featuring a 40-foot illuminated bar, seats over 140 people between Glowbal Grill and AfterGlo. There is a year-round heated patio, which is the ideal location for a beverage on a hot summer afternoon or a fall evening to enjoy the passer-by’s and sounds of Yaletown.

Barely six weeks after signing the lease on his lofty new restaurant space at 990 Smithe, just off Burrard in Vancouver, Chef Dale MacKay will open his second urban eatery.  ensemble Tap, as the name implies, offers casual dining with the added attraction of fresh and fabulous beer on tap.

During three private preview seatings this weekend, friends and family sampled ‘modern comfort’ food from the new Tap menu, and enjoyed a pull or two of the 15 icy-cold micro-brews on tap, or the 25 more in bottles.  Chef/Owner Dale MacKay and Executive Chef Brad Hendrickson captained Taps newly renovated catering-size kitchen through full-house dinner and lunch services, but the culinary language spoken was foreign to MacKay’s five-star, fine-dining reputation: “Tap Burger, Thai Chicken Wings, Bangers and Spaetzle, and Brisket Sandwich on 19.  Barbeque Ribs, Popcorn Prawns, two Chorizo & Clams on six.”  The execution and delivery however, were completely familiar – sophisticated global flavour profiles, precise technique, and artful presentation.

In spite of his many professional accomplishments at the top of the food chain, MacKay covets so-called comfort food in his off time.  He credits his mother and Canadian prairie up-bringing for an embedded love of simple, classic dishes.  Tap’ssmoked centre-cut, bone-on pork rack chop with sauerkraut pays homage to Dale’s childhood favourite meal of pork chops with sauerkraut, but this version takes an eight-hour aromatic brine bath before being cold-smoked, grilled and crusted with herbed bread crumbs, and presents with glazed baby carrots and charcuterie mustard.  As with all of MacKay’s new  ‘modern comfort’ creations, the Smoked Pork Chop on the menu belies the culinary back story – as does the very comfortable $19 price tag.  Portions are generous and satisfying, erring on the side of abundance.

Other Modern Comforts include Slow-Braised Pulled Pork Nachos with Housemade Aged Cheddar Cheese Sauce and Sweet Corn, Jalapeno Peppers and Cilantro; Dry Thai Chicken Wings with Kaffir Lime and Chili Oil, served with an exotic and otherworldly Dipping Sauce; Full Rack of BBQ Pork Back Ribs braised in Dale’s signature BBQ Sauce and Beer until falling-of-the-bone-tender, then grilled and served with Honey-buttered Cornbread and Crunchy Apple, Cabbage and Carrot Slaw.  Dale’s much-loved and Top Chef Canada Challenge-Winning Pulled Pork Sandwich – so popular on the ensemble restaurant and bar menu – appears on the ensemble Tap menu – growing proportionately and adopting a side of Baked Beans and a cup of trademark ensemble Kennebec Fries.

“It’s been massive fun to create and open ensemble Tap. The casual West Coast dining restaurant is a natural stop for golfers after a day on the course and those on their way back from a day of skiing at nearby Hemlock Ski Resort. To start there is a full-service bar, on-tap beer, and a selection of wine available.

The menu serves a variety of fare ranging from appetizers and hamburgers, to steak and seafood. The overall quality of both the food and service were on par with a rural resort restaurant – nothing too fancy, made to order, and served with a smile.

While the cuts of meats and selection of vegetables were fresh, there was evidence some items were not prepared on premise. However, this short cut allows the restaurant to ensure a full menu can be offered year-round, even during periods of low volume.

The warm wood paneling, exposed wood beam ceiling and real wood-burning fireplace bring a welcomed natural feeling. The front side of the restaurant has French doors, which open up to a patio overlooking the golf course, river and mountains – an ideal dining spot on a warm summer evening.

The River’s Edge Restaurant is located about a 1.5-hour drive from downtown Vancouver along the Lougheed Highway, and approximately 25 minutes from Abbotsford. It is open daily, year-round for breakfast, lunch and dinner, from 8:00am – 9:00pm.
