Steamworks Introduces Bottled Beer

In 1995, Steamworks Brewing Company took over a location, just a few blocks up from the landmark steam clock, in Vancouver’s Gas Town district. Their location was equipped with a rare century old heat system. The owners, Brewmaster, and engineers worked together to build what has become Canada’s only steam-generated brewery.

After almost two decades of brewing fresh beer, the iconic Vancouver microbrewery has expanded their offerings into a new line-up of bottled beer. The new 650ml bottles are available in six-packs means that beer enthusiasts can take their favourite tastes home with them.

For their launch, Steamworks bottled beer is available in Pale Ale (5.2% alc/vol.), Pilsner (5% alc/vol.), at various beer and liquor stores across British Columbia

Stay tuned… plans are in the works to release Frambozen, Wheat Ale, Heroica Oatmeal Stout and Pumpkin Ale in limited edition runs.

Ensemble Tap

[slideshow]

Barely six weeks after signing the lease on his lofty new restaurant space at 990 Smithe, just off Burrard in Vancouver, Chef Dale MacKay will open his second urban eatery.  ensemble Tap, as the name implies, offers casual dining with the added attraction of fresh and fabulous beer on tap.

During three private preview seatings this weekend, friends and family sampled ‘modern comfort’ food from the new Tap menu, and enjoyed a pull or two of the 15 icy-cold micro-brews on tap, or the 25 more in bottles.  Chef/Owner Dale MacKay and Executive Chef Brad Hendrickson captained Taps newly renovated catering-size kitchen through full-house dinner and lunch services, but the culinary language spoken was foreign to MacKay’s five-star, fine-dining reputation: “Tap Burger, Thai Chicken Wings, Bangers and Spaetzle, and Brisket Sandwich on 19.  Barbeque Ribs, Popcorn Prawns, two Chorizo & Clams on six.”  The execution and delivery however, were completely familiar – sophisticated global flavour profiles, precise technique, and artful presentation.

In spite of his many professional accomplishments at the top of the food chain, MacKay covets so-called comfort food in his off time.  He credits his mother and Canadian prairie up-bringing for an embedded love of simple, classic dishes.  Tap’ssmoked centre-cut, bone-on pork rack chop with sauerkraut pays homage to Dale’s childhood favourite meal of pork chops with sauerkraut, but this version takes an eight-hour aromatic brine bath before being cold-smoked, grilled and crusted with herbed bread crumbs, and presents with glazed baby carrots and charcuterie mustard.  As with all of MacKay’s new  ‘modern comfort’ creations, the Smoked Pork Chop on the menu belies the culinary back story – as does the very comfortable $19 price tag.  Portions are generous and satisfying, erring on the side of abundance.

Other Modern Comforts include Slow-Braised Pulled Pork Nachos with Housemade Aged Cheddar Cheese Sauce and Sweet Corn, Jalapeno Peppers and Cilantro; Dry Thai Chicken Wings with Kaffir Lime and Chili Oil, served with an exotic and otherworldly Dipping Sauce; Full Rack of BBQ Pork Back Ribs braised in Dale’s signature BBQ Sauce and Beer until falling-of-the-bone-tender, then grilled and served with Honey-buttered Cornbread and Crunchy Apple, Cabbage and Carrot Slaw.  Dale’s much-loved and Top Chef Canada Challenge-Winning Pulled Pork Sandwich – so popular on the ensemble restaurant and bar menu – appears on the ensemble Tap menu – growing proportionately and adopting a side of Baked Beans and a cup of trademark ensemble Kennebec Fries.

“It’s been massive fun to create and open ensemble Tap. Inasmuch as my niche is fine dining and I thrive on the enforced perfection of technique and execution of that discipline, I am a super competitive person and I really wanted to use everything I know about food and have learned working with chefs Gordon Ramsay and Daniel Boulud in Europe, Asia and New York, to perfect simple food, and let people know that there is more to me and to my culinary team, than what they may have seen so far,” says MacKay.  “ensemble Tap is open from 11am thru to midnight, daily starting tomorrow. Come see us for lunch or dinner, or just pull up a seat at the bar.”

Chef MacKay invites guests to:

Joe’s on Jupiter, Atlanta, Georgia

[slideshow]

Sports bars are known for great wings and burgers, neon signs, loud music, and big screen TV’s. Joe’s on Jupiter is no different; well, actually, it is different! This sports bar located in Midtown in Atlanta, Georgia is a gay sports bar.

Joe’s on Jupiter has a fierce menu of burgers, nachos, wraps, calamari and all your pub favorites. Of their entire menu, they are best known for their wings; from mild to flaming! Quality food is something they pride themselves on.

They also pride themselves on two other important items. The first is for having one of the best selections of beer in Atlanta; 32 beers on draft and over 100 in the bottle.

The second is the fun and relaxing atmosphere with sexy, sassy servers.

“You gotta stay here,” said my server, Chase, as I was about to get up to leave. “You’re too cute to leave.”

So not only are the staff incredibly good looking, but if you are good looking there’s a good chance you could get hit on.

The crowd is very masculine; if you are looking to hang out with jock-types, this the place to check out.

For out-of-state patrons, Joe’s on Juniper allows smoking indoors; so be prepared.

Joes on Jupiter is one of ten different F&B establishments owned by Metrotainment Cafes. Metrotarinment Cafes operates throughout the greater Atlanta area and employs over 700 people.

Host a Bacchanalian Bash – A new Twist on the Toga Party

[slideshow]

Hosting a toga party conjures up images of college guys having a kegger, running around in bed sheets. Throw away those trashy memories of days gone by and host a fun, adult party by celebrating the ancient festival of the grape harvest. Yes, there will be the traditional Greek and Roman revelry. It’s called a Bacchanalian Bash!

Invite friends over for an evening of Greek and Roman inspired food, wine and ambiance they’ll be sure to enjoy. It’s easy to do and the results are impressive.

For décor, use columns, urns, grapes, topiary and fig trees, and vines. These are easily rented from supply stores like Greenscape Design and Décor in Vancouver. Try to find artwork that is Roman or Greek inspired.

Rather than serving beer from a keg, serve guests red and white wine – after all, it is a grape harvest festival. Serve white wine chilled and red wine decanted, near room temperature. Have lots of wine glasses, a few bottle stoppers and a wine opener available.

Easy to serve appetizers include 6-year aged cheddar cheese with an assortment of water crackers, green and red grapes, dried figs, sliced apples, ancient grain bread, olives and almonds.

If you and your friends do not have access to a suitable toga outfit, it is cheaper to go to a fabric store and buy a few yards of white fabric; plus it’s easier to drape. Traditional togas have a white robe with a red sash. Purple sashes are the royal colour typically reserved for the Togaboy. Costumes are easily accessorized with leather cuffs, a green laurel and gold jewelry.

Set the mood by playing traditional Greek and Roman music in the background, turn down the lights and enjoy the evening over a few (or many) glasses of wine.
