Dirty Vegas

If you’ve been to Cactus Club lately, you’ve probably tried many of their new cocktail features. One of my favourites is the Dirty Vegas. Now, if you’re going to re-create this one at home, use fresh, local strawberries; not ones imported from California because they just don’t have the flavour.

  • 3 Fresh Local Strawberries
  • 2 oz Vodka
  • 1/4 Lemon
  • 1/2 oz Mazzetti White Vinegar
  • Fresh cracked pepper

In the bottom of a Boston shaker, muddle strawberries. Fill martini shaker half full of ice and add vodka, Mazzetti and juice from 1/4 of a lemon. Shake until the shaker begins to frost. Pour into a chilled martini glass. Grind fresh cracked pepper over-top.

Cactus Club: Sunset Soda

This summer, Cactus Club Cafe has a limited time menu of weekly summer cocktail features. This one, Sunset Soda is on the menu for the entire 98 Days of Summer!

  • 1 oz Vodka
  • Peach Bellini
Fill a small rock glass 5/8 full of peach bellini. Add vodka.
Tip: On a hot day, keep it cool even longer by adding in a few ice cubes first.

Cactus Club: Gin N’ Juice

It’s the 98 Days of Summer at Cactus Club Cafe, and to celebrate, every week they are featuring cocktail specials for just $4! That’s unheard of! In addition, there will be three signature cocktails available for this sumer, and this summer only. The first is a summer favourite, gin n’ juice.

  • 1 oz Gin
  • 2 oz Tonic
  • Splash of Grapefruit Juice

Fill a rock glass with ice. Add gin, tonic and then top with a splash of grapefruit juice. Garnish with a lime wheel.

Cactus Club English Bay is Now Open

The long awaiting opening of the new Cactus Club location at English Bay in downtown Vancouver is now over. The new two-story restaurant features beautiful floor-to-ceiling windows overlooking the beach and ocean.

The menu features most of the classic Cactus Club menu items and new features from Chef Rob Fenie. Ocean Wise has even endorsed the menu, meaning that seafood served in the restaurant meets the sustainability standards set-out by the Vancouver Aquarium.

As with other locations, the staff are warm and friendly.

The restaurant also meets Leadership in Energy and Environmental Design (LEED) Gold Certification, for its design, construction and operations. The building features a living green rooftop, organic garden and water-efficient landscaping.

The Cactus Club English Bay is located at 1790 Beach Avenue and reservations can be made by calling 604.681.2582.
